Grade B Madagascar Red vanilla beans have the highest vanillin content and appear reddish in color throughout the vanilla pod. They are the same as our Grade A beans, but red vanilla beans contain slight imperfections called splits as they ripen longer to maximize vanillin content. They are called ‘splits’ because some beans are split at the end due to the extra growing time. Red vanilla beans are frequently chosen for vanilla extract due to the vanillin content.
