For chicken enchiladas: start with 1 part mix to 2 parts liquid, adjust to your preferred consistency, and heat until smooth. Pour over shredded chicken-filled corn tortillas and bake at 375°F until bubbly. It also works simmered with turkey, pork, or duck; spooned over chile rellenos, tamales, or black beans; and stirred into rice. For a wet marinade, stir into olive oil, coat the protein, and let it rest before grilling.
