Manchamanteles means tablecloth stainer. It is one of the seven canonical moles of Oaxaca, traditionally served at weddings and celebrations where the sauce is so richly colored it marks every cloth it touches. That is how it earned the name. Sweet and fruity where mole negro is dark and savory, it is built on aji amarillo and guajillo chiles, tomato, and red bell pepper rather than cocoa. As a dry mix, you choose the liquid: water for bright and fruity, chicken broth for depth, cream for something rich. Takes a pork shoulder or pork chops from Tuesday night to the dinner the family asks for again. For enchiladas: start with 1 part mix to 2 parts liquid, adjust to your preferred consistency, and heat until smooth. Pour over filled corn tortillas and bake at 375°F until bubbly. It also works braised low and slow with pork shoulder; spooned over plantains, sweet potatoes, or black beans; and stirred into rice. For a wet marinade, stir into olive oil, coat the protein, and let it rest before grilling.
