Red Cherry chile peppers are botanically classified as Capsicum annuum and belong to the Solanaceae (nightshade) family, which also includes potatoes, eggplants, and other pepper varieties. Also known as Hungarian Cherry peppers or Cherry Bomb peppers, they are named for their resemblance in size and shape to cherries and cherry tomatoes. Due to their thick flesh, they are unsuitable for drying and are most often enjoyed fresh or pickled. The Red Cherry pepper plant grows upright, reaching about 2 feet in height and producing roughly 15 pods per plant. The petite fruits measure 1-2 inches in both width and height and mature to a bright red or orange hue. Inside, they feature thick red flesh filled with numerous white seeds, which carry more heat than the flesh itself. The Red Cherry chile pepper offers a sweet, tangy flavor with mild to moderate heat, ranging from 100-3,500 Scoville Heat Units (SHU). These peppers pair beautifully with prosciutto, sausage, cream cheese, goat cheese, provolone, tomatillos, and pork. In Hungarian cuisine, they are often pickled, brined, or smoked whole, while in Italian-American cooking, they are a staple ingredient in cherry pepper shooters-a beloved antipasto dish. Red Cherry chile peppers are believed to have originated in Mexico, Central America, and South America. From there, they spread to the West Indies and then to England in 1759. Historical records date their cultivation as early as 1586, with illustrations appearing in the 1613 herbal text Besler’s Celeberrimi Eystetensis. Today, these vibrant, round peppers are grown commercially in the United States, Mexico, and Europe.
