Preparation and cooking instructions: Stove Top: Boil 2c rice in 4c of water (or stock). Stir, cover, reduce heat to LOW and SIMMER for 30 minutes. Convection Oven: Mix 5lb rice and 5qt water (or stock) in a 4" hotel pan. Cover with foil. Bake in a convection oven at 350° for 1 hour. Spoon rice into 2 large sheet pans to rest at room temperature. Season with Kosher salt. Once cool, transfer the rice to a storage container and refrigerate. For each serving, heat rice in a pan with butter or olive oil.
