Our old-fashioned country smoked bacon has been made the same way for the last 100 years. Every slab is hand rubbed with our simple dry cure ingredients of salt sugar and sodium nitrite, then slow smoked for an unforgettable flavor that has been loved for generations. The country ham is first hand rubbed with the “cure”, a blend of primarily salt and sugar. The hams cure naturally though seasonal changes in temperature that occurred through the Winter, Spring and Summer, rendering the hams perfectly cured for the finest flavor and quality. Our biscuit mix is complete all you add is water, it is made with sweet cream buttermilk and real churned butter. Please note our country meat is salt cured and will be salty in nature. Do not be alarmed if your product are warm when they arrive. All meats are dry cured product. and do not require refrigeration. It has a shelf life of three months. Refrigerating or freezing upon receipt will extend quality and life of the product. All products are USDA inspected and meet all USDA shipping requirements for safety. Country cured meat is a process of rubbing it with salt, and sugar, and other spices creating that distinctive taste that can only be described as Country Ham or Country Cured Bacon. The best Country Ham originated as a method to preserve meat for the winter when the family farms of Appalachia did not have electricity and refrigeration. While most people purchase the ham or bacon for the salty taste and richer flavor, you can reduce the salt by soaking the ham, bacon slices or ham slices in water before cooking
