Combine 25lbs of 70/30 pork, 12 ounces water, 1 bag of seasoning. Coarse Grind meat. Add water and seasonings mix 3-5 minutes. Fine grind through a 3/16ths inch plate. Stuff into 32mm edible casing (not included). Optional. Replace water with vinegar, can also be cured with 1 oz of 6.25% sodium nitrite.
