Directions with the set give the ratios of tea and sugar needed to get started with this set. <br>For optimal conditions, keep out of direct sunlight, cover brewing vessel or storage container with a tight weave cloth to allow the culture to breathe but prevent infiltration. <br>Do not use cheesecloth as your top cover. Instead use 100% cotton cloth cover, coffee filter, or a tightly woven breathable cloth. <br>It is very important that Kombucha has access to air while it ferments.
